Red Velvet is Back
Red Velvet Cupcakes (Squared) with Chocolate Cream cheese Frosting

This in now the third time I have made red velvet cake. This time, upon the request of my husband who loved the Red Velvet cupcakes I made HERE (where you can also get the link to the recipe I used). I brought them over to a friends to share for a dinner get-together( I refuse to use the term pot-luck-it's so out-dated).

I also had just bought this new square baking pan and I thought it would be perfect to make cupcakes in, red velvet cupcakes. :)


So, I used the same recipe I used the other two times that always came out perfectly BUT, this time they seemed quite dry. Maybe I left them in the oven a minute or two too long?
That's the only thing I can think of because I did everything else the same and followed the recipe EXACATACLY.



I served them with vanilla ice cream and I think that helped because everyone seemed to like them OK.

I tend not to make the same recipe twice without some kind of different twist, I made a version of Stef's favorite from Cupcake Project Chocolate Cream Cheese Frosting to go on this round of RVC.

Chocolate Cream Cheese Frosting:
16 oz cream cheese(softened)
1/2 cup butter (softened)
1 tbs vanilla
3 Cups powdered sugar
1/2 cup cocoa powder(sifted)

-Beat cream cheese and butter until smooth and fluffy
-Add powdered sugar and mix
-Add vanilla and mix
-Then add cocoa powdered and mix well.. and your ready to frost.

This frosting was very, very good although, I think I like a lemon cream cheese frosting a little more than this one.

These look so good Ivy! They look very funky done in the square pans- I don't think I've ever seen square small baking pans- very cool.

Those square cupcakes are so super cute! Glad you enjoyed the frosting. I think calling lemon better would be a stretch for me, but I do also really like lemon cream cheese frosting. Esp. in the summer.
