May Day-May Birthday-May Recipe

Today is actually also a very special day for me because my dearest baby sister was born on this day sixteen years ago. Lucia May Claire Morgan You are a beautiful May flower in my life and I love you. Have a wonderful Birthday my Sweet!

And now for a Refreshing Recipe...
CASHEW CREAM
Last week I saw Taste Buddies post this Cashew Cream and I really just HAD to try it right away. It looked good, healthy, and simple to get ingredients and make. My one speed bump was the discovery of raw cashews being $12.99 a pound at whole foods. That's pretty expensive right? I mean I don't know if I could afford to eat this cashew cream everyday.

Anyway, I wanted to pass the recipe on because I really enjoyed it, it was a different refreshing change for breakfast. Below is the modified recipe I ended up with in the end or you can get the original HERE at Taste Buddies-BTW a great energetic blog you should check out if you haven's already.

Blend the following ingredients until a creamy consistency
(yields like 1 1/2 cups so if you don't need that much halve the recipe)
1 1/2 cup of raw cashews
3/4 to 1 cup cold ice water water
1 tbs honey
1 tbs vanilla paste

-Cut up whatever fresh fruit you have. I did cold Fuji apples, tangerine pieces, mango, strawberries and banana.

Serve with breakfast or for breakfast. :)
