The End of Summer Party
Ice Cream Cone Cupcakes:
Vanilla cupcake with pink and chocolate buttercream frosting.
These found their way to a kid's summer party and had a blast.

First I baked some regular vanilla mini cupcakes and let them cool.
Then I made some vanilla buttercream frosting.
And lined the inside of empty icecream cones with a little bit of frosting.
Then Placed the cupcakes inside the ice cream cones.


I had read Chockylit's blog when she made these and she was saying how when the cupcake batter is baked in the cone-the cone comes out soggy. I really wanted to make these beacuse they look great but they had to taste good too. I didn't want soggy- that's not so good.

I did some test runs and sure enough, they were soggy. I tried lining a waffle sugar cone with chocolate and then baking the batter in the cones to see if the chocolate would protect the cone a little-This helped slightly but I needed a guarentee that the cones would stay crisp. So this is the method I woke up with in the middle of the night. I think they turned out. I mean I didn't have a soggy cone but, the cake didn't go all the way to the bottom of the cone-I just filled it with some frosting and they taste fine.


So, then I swirled the frosting on with a big star tip to make it look like soft-serve ice cream.


Sprinkled on some fun ice cream sprinkles for decoration. I also put some rainbow sprinkles on after but didn't take pics. The rainbow sprinkles livened them up a little more.

You and Cheryl both have such unique approaches to the ice cream cone cupcake. I like the idea of not baking the cupcake in the cone for simplicity's sake. :)
