with Silky Swirls of Chocolate
These gems are super easy to make and I love them because you can get creative with your add-ins. Here I just did semi-sweet chocolate. They taste, and look amazing. I love the rustic look they have with every meringue having an organic and unique outcome. These are also very sweet, so doing bittersweet choc would be a nice balance as well.
You'll Need: (makes about a dozen depending on your cookie size)
1/2 cup semi-sweet chocolate chips or bar chopped
4 egg whites
1 cup sugar
Parchment paper
Oven
Electric Beater
2 large spoons

Steps to success:
-Preheat oven to 275 degrees F
-Melt chocolate over double-boiler and set aside
-Separately, heat egg whites and sugar for 5 minutes until quite hot.
Take off heat and beat with electric mixture for 5-7 minutes until the mixture is pure white and you have stiff peaks.
-Drizzle the chocolate over the egg-white mixture and gently fold into egg whites-DO NOT OVER FOLD, YOU WANT PRETTY CHOCOLATE RIBBONS.
-Bake for 35-40 minutes, then take out of oven and place on a cooling wrack. Store in airtight container.
These cookies are quite delicate and have a light crunchy shell with a soft marshmallow-y inside. Yum-right. :)
People love these and like I said, you can get creative with different flavored ribbons. Caramel, butterscotch, melted peanut butter chips, mint chocolate, fruit preserves, maybe even a lime or fruit curd??? Possibilities?... endless people!
