NANA Cupcakes

Banana pudding cupcakes with chocolate chips, caramel, pecans, banana chips, and a cream cheese frosting.

These turned out really good despite the fact that I "winged" the recipe. ;/ (wrught wro)
They were made for my friend's birthday at work. ANGELA! Miss Queenie! Maybe you would remember her from this post last year.
One of her favourites is banana pudding. So, I wanted to make her something along those lines.

POPULAR ASPECTS: The caramel that was baked inside and the cream cheese frosting is what people talked about the most.

If you like banana's you should try making these. :)

The Banana Pudding Cake -recipe by me
(makes about 24 regular size cupcakes)

-In a large mixing bowl, and with an electric mixer, beat 1 1/2 sticks butter(room temp) with 1/2 cup brown sugar and 3/4 cup granulated sugar until really super fluffy.
-Then add 3 eggs, one at a time.
-Splash in 1 Tbs vanilla until creamy and mixed.

-In separate mixing bowl, with an electric mixer beat 1 pkt vanilla instant pudding, 1 1/2 cup milk, 2 tbs banana extract, and 1 completely mushed banana that is just ripe not brown-ripe until a thick pudding consistency. Set aside.

-In another bowl whisk 3 cups cake flour, 1 1/2 tsp baking soda, 3/4 tsp baking powder, 1/2 tsp salt. Set aside.

-Starting with flour mix, alternate mixing in the flour mix and pudding mix to the butter and egg mix. Add more milk if you want a better consistency 1/4 cup at a time. Batter should be a thick batterish type consistency but not too thick like a banana bread batter would be.

-Add mini semi-sweet chocolate chips to the batter if desired.

-Spoon batter into the papers until 1/3 full. Then spoon a small dollop of caramel in the center on top of the batter in the cupcake papers. Cover caramel dollop with another spoonful of cake batter.


-Bake 20 minutes (for regular size cupcakes). Let cool and then frost.
Garnish with banana chips, chocolate chips and chopped dry roasted pecans.

Cream Cheese Frosting
2 Tbs Water
2 tbs brown sugar
1/2 cup powdered sugar
1/2 stick butter, room temp
3 8 oz. pks cream cheese, room temp
1 Tbs vanilla extract

-Dissolve brown sugar in water until granules are completely dissolved
-Beat in butter and cream cheese until smooth and lumps are gone.
-Add vanilla and
-If needed, powdered sugar to taste
-Mix well until fluffy

What lovely little swirls on the frosting! That's a great combination of nuts, brown sugar, vanilla and banana, with a great surprise in the middle. Yum!

Ooohhh..... bananas! I made a banana/caramel combinations cupcake once, and now I'm scratching my head as to why I haven't used those flavors again together. These look very yummy, and I love the decoration of the one in the last picture.
