SUNDAE CUPCAKES



A chocolate soufle-like cupcake with whipped cream frosting and a cherry on top.
I volunteered to make cupcakes for my friend's baby shower. Kellie was and now has had some beautiful triplets! (two boys, one girl). After disputing what to make for her shower, I got orders from Kellie that she must have lots and lots of chocolate. So, I made these lovely, chocolatey cupcakes and served them with ice cream, hot fudge and sprinkle toppings. Everyone absolutely loved them and thought they were the best little chocolate cakes EVER! ever! eVeR!
One of my friends who organized the shower, Amy made tea sandwiches that kicked butt! She even made this awesome garlic and sun-dried tomato bread for one of the sandwiches.


















Cupcakes:

14 Tablespoons dark chocolate, chips or chopped chocolate

2 Sticks butter minus 1 tablespoon-sliced into tablespoons so it melts faster

1 Cup sugar

4 Eggs

1 Tablespoon & 1 teaspoon flour

Preheat oven to 350 degrees

Melt chocolate and butter together in a medium bowl over a simmering pot of water

Take off heat and mix in sugar with a spoon, let cool 10 minutes
















Stir in the eggs one at a time mixing well after each one

Stir in flour and mix well

Spoon into your cupcake papers and bake 10-15 minutes

Turn off oven but leave the cupcakes in the oven for another 10 minutes, this prevents major sinking.

Let cupcakes completey cool before frosting.




The Whipped Cream Frosting:


1/2 An envelope unflavored gelatin

1 1/2 Tablespoons water

1 1/2 Cups whipping cream

1/4 Cup powdered sugar

1 Tablespoon vanilla

1 Jar maraschino cherries with stems


Sprinkle gelatin over hot water in a measuring cup and let stand until it softens

Microwave it for 10 seconds and stir until it completely dissolves

Let the gelatin cool but keep it a liquid, it cannot be added to the whipped cream if a gel

Beat whipping cream in a large bowl until you have soft peaks

Add powdered sugar and continue to beat until you see mixture holding shape

Add gelatin in a steady stream while beating

Add vanilla and beat until you have stiff peaks but remember, you don't want butter

Cover and store in the fridge until needed


Rinse marachino cherries in cold water and dry.

Fill a piping bag with the whipped cream. Use a large star tip and pipe a dollop of frosting on the cupcake and top with a stemmed maraschino cherry.
